What Is a Ginger Beer Spider?
When you add ice cream to a soda, you will get a dessert referred to as an ice cream float. In Australia and New Zealand, it is also common to call it a “spider” because when the carbonation hits the ice cream, we can observe a reaction resembling a spider web.
It was invented in 19th-century Philadelphia when a vendor called Robert M. Green ran out of ice for his flavoured drinks and used vanilla ice cream from a neighbouring vendor instead. He knew how to keep his business fluent!
Nowadays, this practice is also popular when preparing alcoholic beverages, especially sweet ones. Ginger beer float is a prominent example, and it tastes best with freshly whipped cream!

- a few small cookies (optional)
For the Fresh-Whipped Cream:

- 2 tablespoons powdered sugar (or more if you like it sweeter)
- 2 teaspoons vanilla extract
Equipment Needed:

- whipped cream charger
- whisk
- bowl
- measuring cups and spoons
- ice cream scoop
- beer glasses
Preparing the Fresh-Whipped Cream
- Insert the powdered sugar, vanilla extract, and whipping cream into the bowl and mix them with a whisk until smooth.
- Taste it and check whether the sweetness level is okay for you – if not, add 1 teaspoon at a time, and make sure again.
- Pour the cream mix into the dispenser.
- Screw the top, and then the decorator tip on.
- Install the cream charger safely in the cap and screw it onto the top of the dispenser. You may hear a hissing sound, but that’s perfectly normal.
- Shake it, shake it!
- Move the canister upside down and test if it works correctly (preferably over a sink or bowl so that you avoid unnecessary mess).
- Leave the dispenser for a moment and proceed to prepare the ginger beer float.
Preparing the Ginger Beer Ice Float
- Skewer the candied ginger slices onto the drinking straws.
- Pour the ginger beer into chilled glasses, approximately at three-quarters of the full capacity.
- Add 2 large scoops of ice cream to each glass, and then use the cream dispenser to release some fresh-whipped cream onto the drink.
- Insert a candied ginger straw into each glass, and optionally add a few tiny cookies.
- Enjoy the beverage dessert with someone you want to surprise!
