  • 1 can (14 ounces) full-fat coconut milk or coconut cream 
  • 2 tablespoons powdered sugar (or more if you like it sweeter, but we don’t recommend going over 3 tablespoons)
  • ½ to 1¼ teaspoons pure vanilla flavouring or extract (depending on your preferences)
  • Thickener (if necessary)

Step-by-Step Instructions

  1. Place a small bowl and a whisk or beaters in the freezer for at least half an hour.
  2. Avoid shaking the coconut cream or milk. Instead, just open it, and if you can’t see any thick, spoonable cream, cover it and put it in the fridge for a few hours (or even overnight).
  3. Scoop ¾ cup of the solid coconut cream that will thicken at the top of the can, and place it in a small chilled bow. 
  4. Whisk or beat the coconut cream with chilled beaters up to a point where it becomes smooth and a bit fluffy (around 1 min). Alternatively, to make your work easier, you can use a cream whipper.
  5. Add the powdered sugar and vanilla and continue whipping.
  6. If your lactose-free whipped cream turns out to be too soft or not thick enough, you can use a thickener.
  7. Cover the coconut whipped cream and place it in the refrigerator for up to 3 days. The longer you let it chill, the thicker it will become.
  8. Add it to your favourite desserts and enjoy!

How to Prepare Lactose-Free Whipped Cream from Aquafaba?

Coconut milk and cream are not the only options when you want to prepare vegan, lactose-free whipped cream. Surprisingly, you can also use aquafaba for that purpose, which is the viscous water in which legume seeds such as chickpeas have been cooked.

Here is how to prepare this kind of homemade whipped cream:

  • A can of chickpeas (preferably with low or no sodium so that it’s not salty)
  • 1/8 teaspoon cream of tartar
  • 1/2-3/4 cup powdered sugar (depending on how sweet you want it to be)
  • 1 teaspoon vanilla extract

Step-by-Step Instructions

  1. Drain the liquid from the chickpeas into a bowl, keeping the seeds aside for another use.
  2. Add cream of tartar to it, and start beating with a hand mixer. You can also use a modern alternative, which is a dedicated dispenser with cream chargers.
  3. If using a hand mixer, turn the speed to high and keep on beating up to a point when stiff peaks appear (around 3-4 min).
  4. Add the vanilla extract and powdered sugar.
  5. Continue mixing until it gets smooth and fluffy (around 1 min).
